Roasting and grinding
Cumin is roasted before grinding in our own unit at Batala, Punjab. That step is what separates a good jeera powder from a raw, dusty one: roasting develops the deep, warm note the powder is bought for, and it cannot be recovered afterwards.
How it is used
Used as a finishing powder over raitas, chaats and buttermilk, and as a base spice in gravies. Retailers move the household packs, while caterers and blenders take the bulk sizes.
