Milling and season
Maize milled to the coarse, rustic texture makki di roti needs. A fine grind will not hold together the same way on the tawa, so the grind is deliberately left open rather than milled smooth.
This is a seasonal line. Makki demand concentrates in the winter months alongside sarson da saag, and both supply and pricing move with the season, so we would rather say that plainly than take an order we cannot fill out of season.
How it is used
Makki di roti, most often served with sarson da saag through the Punjabi winter. Also used in bhakri and in mixed-grain flours.
