Storing Flour and Besan in Bulk Without Spoilage

Flour and besan bought in retail-sized packs get used up fast enough that spoilage rarely comes up. Bought in bulk, cartons and master bags meant to last weeks or months, storage stops being an afterthought and starts being the thing that decides whether the order was worth it.

Why besan is the riskier of the two

Besan is ground from chana dal, which carries more natural oil than wheat. That oil is exactly what gives besan its flavour, and exactly what turns it rancid faster than plain atta if it is stored warm or damp. Barik and mota besan both need cooler, drier storage than wheat atta to hold their shelf life.

The three things that actually spoil flour

  • Moisture. Damp flour clumps, then moulds. Bags stored on a floor or against an outside wall pick up ambient moisture even in a covered space.
  • Heat. Warm storage speeds up oil oxidation in besan and multigrain atta especially, and accelerates weevil activity in all of them.
  • Pests. Flour weevils and moth larvae get into poorly sealed bags and spread between them if stock sits too long in one place.

What holds up in practice

Stock kept off the floor on pallets or shelving, in a cool space away from direct sun, with bags sealed between uses, holds for months without issue. Master bags and cartons should be rotated first-in-first-out rather than pulled from the back, since the oldest stock is the stock closest to turning. Multigrain atta, with more than one grain and often some oil-bearing content depending on the blend, benefits from the same care as besan rather than being treated like plain wheat atta.

Ordering at the right interval

The cheapest per-kilo price on the largest carton is not a saving if a third of it turns before it sells. Match order size to real turnover, and if you are unsure what that looks like for your market, ask before you order rather than after.
