Milling and character
Dhania milled in our own unit at Batala, Punjab. Coriander seed is cleaned and sorted before grinding, then milled to a fine, even texture that disperses into a gravy instead of sitting on top of it.
Freshly milled coriander carries a clean, citrusy note that fades fast once ground, which is why long-stored powder tastes flat. Milling our own stock means it moves rather than sits.
How it is used
Alongside turmeric, one of the two base powders in most Indian cooking, used by volume rather than as an accent. Bought by retailers for household packs, and by kitchens, caterers and masala blenders taking the larger sizes.
