The blend
A bold blend weighted towards the darker whole spices, built to hold its character through the long cooking a meat curry needs. Lighter aromatic blends flatten out over that time, which is why a general-purpose masala rarely works for meat.
How it is used
Used in mutton and chicken curries, keema and slow-cooked preparations. Bought by retailers, dhabas and restaurant kitchens.
Added early, with the onions and the base, so it has time to cook into the gravy. Meat blends added late sit on the surface and taste raw, which is the opposite of how a finishing masala is used.
