India does not cook with one spice box. What anchors a Punjabi kitchen barely features in a Tamil one, and a distributor stocking a single national range often misses the regional staples that actually move volume. Here is a working map.
North India
Punjab, Haryana and the wider north cook on mustard oil or ghee, and lean hard on garam masala as the everyday finishing blend. Ground coriander and cumin form the base of most gravies, and tandoor-style cooking pulls in a lot of red chilli for colour. Rajma, chana and dal makhani are the pulses that move fastest here, each with its own dedicated masala blend.
South India
Curry leaf, mustard seed and dried red chilli tempered in oil open most dishes, a technique the north barely uses. Sambar masala and rasam powder are staples in their own right rather than optional extras, and tamarind does the souring work that aamchur does further north. Coconut, fresh or dried, is a base ingredient rather than a garnish.
East India
Bengal and the wider east use panch phoron, a five-seed blend of fenugreek, nigella, fennel, cumin and mustard, in place of a single base spice. Mustard oil is pungent and central here too, but the cooking style favours a lighter hand with red chilli than the north.
West India
Gujarat and Maharashtra split sharply on sweetness and heat within the same region. Gujarati cooking often balances a dish with a touch of sugar or jaggery against the chilli; Maharashtrian food, especially further south into the state, runs some of the hottest preparations in the country. Groundnut oil and sesame both see more use here than further north.
What this means for a distributor
A distributor supplying a single region can concentrate stock on that region’s core blends and skip lines that will not move. A pan-India distributor needs the fuller range, garam masala and dal makhani masala for the north, sambar masala for the south, alongside enough pack-size flexibility to serve both a Punjab retailer and a Tamil Nadu one from the same catalogue.
