Grade and cleaning
Split Bengal gram, cleaned, graded and sorted before packing. Dal is judged on what is not in it: grit, stones, husk and broken counts are what generate complaints at the retail counter, and none of it can be fixed once it reaches a kitchen.
Pulses are where this business restarted. After the 1954 fire, the family rebuilt around a masoor dal mill, and dal has been handled the same way since.
How it is used
Cooked as everyday dal, used in khichdi and dhokla batters, and roasted and ground into besan. Bought by retailers, kitchens and canteens.
