Grade and character
Whole fennel seed, cleaned and sorted in our own unit. Graded on colour and plumpness: good saunf is green rather than dull yellow, which indicates it has not been over-dried or held too long.
How it is used
Used in cooking, particularly in Punjabi and Kashmiri gravies and in pickling, and served plain or sugar-coated after meals as a mouth freshener. Bought by retailers, restaurants and mouth-freshener packers.
Supplied whole rather than ground, since fennel loses its sweetness quickly once broken. Mouth-freshener packers usually take the cartons and coat or roast in-house.
